They has been using organic compost (cattle and other animal dung, grape skins, pruned tree branches) as fertilizer for 10 to 15 years. ‘I switched to Biodynami from 2007.
Along with the aroma of dried fruits and honey, the acid with a strong presence is mixed in a well-balanced manner.
Rich in taste, rounded, with a long finish and a mineral feel.
Gravieres is considered one of the best vineyards in Santenay’s first-class vineyards. The soil is clay-limestone soil, and the subsoil is layered with various limestones such as pebbles and marl.
