Normally, non-vintage so-called standard class champagnes have a 15-month bottle aging requirement under the Wine Law, and vintage-marked champagnes have a 36-month in-bottle aging period.

In addition, we use a fruit sorting table, which is rare in Champagne, to thoroughly remove rotten grains and dust, and then crush the grapes to pursue the clearest fruits.
