Grapes are hand-picked. When transferring from a stainless tank to a barrel, nitrogen gas is used to prevent oxidation. I own many fields with different personalities, and I change the barrel and aging method depending on the section.
The barrel brewery completed in 2011 is made in consideration of the environment by planting plants on the roof and preventing temperature rise.
Whole bunch fermentation. After fermentation, the wine is aged with fine starch, part of which is transferred to a barrel for malolactic fermentation. Aged in a new French oak barrel for 6 months.
The wine has a nice acidity that comes from the minerals and altitude, and it has a good balance with the fruit.
It has an oak barrel nuance and a rich taste, and boasts a sharpness that sets it apart from the traditional Chardonnay of the South of France.
