“Koshu nigari” is a fresh and fruity new sake made in the traditional Japanese varieties “Koshu”, which is tasted in the autumn when grapes are harvested. After fermenting carefully at a low temperature, bottling the stubborn supernatant in the tank. A very delicate “raw wine” that is neither filtered nor heat sterilized.
